fluffy blueberry cookies
i'm having a cookie phase, and i can't stop. can't. stop. and they're so easy to make, which is the best part!
i had gotten some blueberries from whole foods the other day, and it was a funky batch. they were mostly very tart, with very few sweet ones. i love blueberries, but i couldn't bring myself to eat more than a handful. so what better way to eat them by sticking them in something that is guaranteed sweet?
ingredients:
2 cups flour
half cup (1 stick) softened butter
1.5 tsp baking powder
1 cup sugar
1 tsp vanilla extract
1 egg
1/3 cup milk
1 cup or so blueberries
instructions:

instructions:
- preheat oven to 375F.
- cream butter and sugar.
- add egg, vanilla extract, and milk; mix until all combined.
- in a separate bowl, whisk together flour and baking powder
- add in flour mixture into wet mixture until combined.
- fold in blueberries!
- cover the dough mixture, and refrigerate for an hour minimum
i refrigerated mine for about 1.5 hours - place golf sized dough balls on the parchment paper, and bake for 14 minutes.
- let it cool--and enjoy!
these were so incredibly fluffy, it took all my self-control to not eat more than one! here's to your kitchen smelling a-maaazing, and your home feeling quite warm this winter season.
