fresh peach cake


so, summer is almost over (it isn't yet, i just googled it and it said september 22, whew), and before it is, i want to share this recipe!

it is super easy, and easy as in really minimal ingredients, quick baking time, and delicious results. this cake generally comes out on the moist side, so feel free to keep it in the oven after turning it off for a little bit longer if you so desire. here's the original/healthier recipe -- i tweaked it with the everyday ingredients i have in my pantry to make it a more "go-to" recipe. you can't go wrong with the flavor both ways! and does it also not look absolutely divine?!?! 

ingredients

8-inch circular cake pan
8 tbsp salted butter
3/4 cup sugar
2 eggs
1 tsp vanilla
1 + 1/4 cup flour
1 tsp baking powder
1/2 tsp baking soda
1-2 peaches, sliced

instructions

  1. preheat oven to 350F. line cake pan with parchment paper.
  2. beat butter and sugar until all combined.
  3. add eggs and vanilla.
  4. add flour, baking powder, and baking soda; stir until well combined.
  5. transfer to cake pan, spread evenly.
  6. arrange peach slices in a circular motion on top of the batter, sprinkle with sugar to finish.
  7. bake for 30-35 minutes; cake should spring back slightly.
  8. cool, remove from pan, sprinkle with powdered sugar.
