small batch blueberry chia jam
i'm having a new found interest (i was going to say obsession, but it's not there...yet) in making jam. i've tried to make this with multiple ingredients, but settled on a recipe that had less of the typical overly sweet jam flavor by using more 'natural' ingredients, because, health is wealth, right? 🙆
what i looove about this recipe is that you don't need 10 lbs of fruit and 10 lbs of sugar to make this. it's small batch, meaning you likely have enough ingredients in your pantry and fridge right now to make some jam to last for a week or two (sealed in the fridge). you can also easily double/triple/quadruple this recipe.
who knows, maybe it'll become your new ✨interest/obsession✨too!
ingredients (makes ~half cup)
1 cup blueberries (fresh or frozen, but i prefer fresh)
1 tbsp + 1 tsp honey
1 tbsp lemon juice (lime works too if you're not too picky about it)
1 tbsp + 1 tsp chia seeds
instructions:
- on medium heat, heat the blueberries, honey, and lemon/lime juice on the stove.
- stir until simmering.
- start to smash the blueberries in the pot as it simmers.
- add in the chia seeds, and continuously stir for ~5-10 minutes as it thickens.
- take it off the heat, cool, and jar!
after making and tasting your first batch, you can adjust the ingredients based off your liking.
