chickpea crunch bars
crunch bars were one of my favorite chocolate bars growing up, there was something about those crispy rice pieces that were so fun to bite into. i won't say no to extra protein in my diet, and these are honesty so, so easy to make. with minimal ingredients, too! just take a look for yourself down below 😜
ingredients
1 can chickpeas, rinsed and dried
2 tsp coconut oil
1.5-2 cups chocolate chips
instructions
- open a can of chickpeas/garbanzo beans, rinse and dry them on a paper towel.
- melt 1 tsp of coconut oil and mix together with the chickpeas.
- lay on a baking sheet and bake at 400F for ~30-35 minutes (until crispy/crunchy).
- let them cool in the fridge, and in the meantime, melt your chocolate with 1 tsp coconut oil.
- once the chickpeas have cooled, line a dish with parchment and pour out the chickpeas.
- lather the melted chocolate on top evenly, top with toppings if desired (i did half chocolate, half chocolate + coconut).
- let it set in the freeze for 1-2 hours.
- remove, slice, and enjoy!
i cut them in different sized bars to make it more fun. some bite sized, some more indulgent sized. |
doesn't look like it, but after taking a bite, this is a pretty darn good ratio of crunchy chickpea vs chocolate. might even add some nuts to this the next time i make it! |
