yogurt cake
i had a tub of yogurt to finish before it spoils, and this was the perfect way to do it - and also get some dessert out of it as well (win-win baby).

💫 a cup of coffee, tea, or hot chocolate
💫 whipped cream or ice cream
💫 jam or fresh berries
ingredients
- 1 cup yogurt (i used unflavored, unsweetened whole milk greek yogurt)
- 1.5 tsp vanilla extract (or any flavor would do, i think almond would be absolutely amazing as well)
- 3 eggs
- 2/3 cup sugar
- 1.5 cup flour
- 1.5 tsp baking powder
- powdered sugar for sprinkling
instructions
- preheat oven to 350F.
- beat all 3 eggs, then add the wet ingredients (yogurt, flavored extract as needed, oil) and sugar.
- combine dry ingredients (flour and baking powder).
- pour onto a lined and greased 9" round baking dish.
- bake for 30-35 minutes, checking the middle with a toothpick.
- let it cool before sprinkling powdered sugar on top.
