25 minute banana muffins (dairy, oil, refined sugar free!)
i still had 2 more medium/large overly ripe bananas, and wanted to make something more 'grab & go' - and these were prefect. honestly...i might prefer the texture to these over the banana bread i made last week.
they turned out to be more fluffy and moist than the banana bread, i replaced oil with applesauce (1 pouch of go go squeeze, to be exact!), and that was *chef's kiss*
ingredients
- 2 medium bananas
- 1/2 cup maple syrup
- 1 tbsp vanilla extract
- 1 tbsp cinnamon
- 2 eggs
- 1 and 1/2 cup flour
- 1 tsp baking soda
- chocolate chips (always)
instructions
- preheat oven to 325F
- mash the bananas, then add the maple syrup, vanilla extract, cinnamon, and beaten eggs
- combine the wet with the dry ingredients (flour and baking soda); fold gently
- fold in chocolate
- portion into cupcake/muffin liners
- bake for 25 min, as confirmed by the toothpick test
