chocolate crinkle cookies w/ peppermint marshmallows

 



i made these bad boys for my birthday cookie swap with some girlfriends last weekend, and they were a hit! 

these needed to chill overnight in the fridge before baking, which worked out perfectly because i had 15 mins the day before to prep the dough, and more time the day of to finish off the baking. i wish i had maybe popped the marshmallows during the last few minutes of the bake to have them melt a bit more, but they were the perfect touch to these holiday treats.














don't let "chill overnight" intimidate you, because the prep was so quick! 

ingredients 

  • 2 cups flour
  • 1 cup cocoa powder
  • 1 3/4 cups sugar
  • 1/2 cup butter
  • 4 eggs
  • 1 tbsp vanilla extract
  • 2 tsp baking powder
  • pinch of salt
  • powdered sugar for dusting
instructions
  1. in a large bowl, combine sugar, melted butter, and cocoa powder until smooth and creamy
  2. add in eggs, one at a time
  3. in a medium bowl, combine the rest of the dry ingredients: flour, baking powder, salt
  4. combine the flour mixture into the cocoa powder mixture
  5. refrigerate overnight
  6. roll into balls while still chilled (*chilled important to avoid flat cookies) into powdered sugar, and bake in 350F oven for 12-14 mins
  7. when nearly done, place on top 1-2 mini marshmallows
  8. cool before removing from parchment (it can get sticky on the bottom when still warm/hot)
