blueberry bread


i had initially made this for a baby shower and a bbq the same day--it was so easy that i made two batches! i had never made blueberry bread, but i wanted to bring something that had the warm feel of banana bread, but with a kick. i had frozen blueberries in the freezer, so it was pretty easy to think of what i could replace bananas with.

blueberries are one of my top favorite berries (right after raspberries), and since the sun was finally coming out in portland on that day, it would be a nice, summery, carb-y dessert to bring to both events. the recipe i used was super simple, with all the ingredients you probably already have in your pantry. and let me just say, if you thought that banana bread smells good while baking in the oven, you have got to try this recipe out and experience the way warm blueberries just tickle your nose in all the right places.
before going right into the recipe, though, i would like to mention that the batter turned out to be quite thick. the original recipe calls for 50-60 minutes oven time, but i gave it a generous 1.5 hours using a 5x9 loaf pan for it to be done all the way through.

ingredients

2 eggs
1 cup of sugar
1 cup milk (i used almond)
3 tbsp oil (you can also sub this with unsweetened applesauce)
1 cup all-purpose flour
4 tsp baking powder
1 cup blueberries (if you want more fruit, add as much as your heart desires!)
.5 cup chopped walnuts (same as above! or omit, if preferred)

instructions

mix beaten eggs with sugar
add milk and oil (or applesauce)
sift flour and baking powder
combine both mixtures, folding in frozen or fresh blueberries and walnut pieces
pour into greased 5x9 loaf pan.
bake at 350F for 1.5 h - checking intermittently. 
cool after removing it from the oven; it's best eaten warm!




if i could scream this to you, i would, because i need to emphasize that the marbling on this baby was absolutely beauuuutiful. i wish i had taken a picture of the cross section, but i completely forgot. oops. i read on the original recipe that other people added less sugar and replaced it with a bit of nutmeg and cinnamon - genius. will definitely try that out the next time i make this recipe. at the bbq, we had a slice of this with some vanilla ice cream + fresh blueberries + raspberries. YES x100.
