cheesecake cookies
cheesecake + cookies. why hadn't i tried to make these before?
the cheesecake makes these cookies incredibly soft, moist, and creamy. didn't think cookies could have a creamy texture until i took a bite of these. they actually even look like snowballs, which is absolutely appropriate for this time of year!
each batch bakes in just 10 minutes, which is perfect for some last minute cookie making.
ingredients:
8 oz cream cheese -- room temperature
1/2 cup butter -- room temperature
1 cup granulated sugar
2 eggs
1 tsp vanilla extract
2 1/2 cups flour
2 tsp baking powder
powdered sugar

- preheat oven to 350F.
- beat cream cheese and butter until smooth and fluffy.
- add sugar to the batter and mix until fully combined.
- beat in eggs and vanilla.
- in a separate bowl, whisk flour and baking powder.
- slowly add in dry mixture with wet mixture. don't need to overmix!
- drop tablespoons onto baking sheets. the batter will be sticky!
- bake for 10-12 minutes.
be careful not to bake them until they brown. they should be light in color, with slight browning on the bottom. - cool cookies, then sprinkle on the powdered sugar to finish it off!
