chocolate crinkle cookies

one of the things i crave the most during the holidays is chocolate, and these cookies satisfy those cravings absolutely perfectly.
chewy & chocolatey, just like my christmas dreams :)


ingredients:

1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 tsp baking powder (or, 1/4 tsp baking soda)
3/4 cup granulated sugar
1/4 cup vegetable oil
2 large eggs
1 tsp vanilla extract
1 cup powdered sugar (for coating)

instructions:

  1. whisk flour, cocoa powder, and baking powder.
  2. in a separate bowl, combine oil and sugar. beat until light and fluffy (about 2 minutes on a mixer).
  3. add eggs one at a time, followed by vanilla.
  4. slowly add in the dry mixture, fold in until combined.
  5. form the dough into a ball, place onto cellophane, seal it tightly, and place it in the fridge for at least 2 hours.
  6. preheat the oven to 350F.
  7. roll the dough into 1-inch balls, dip and cover entirely with powdered sugar. 
  8. bake for 10 minutes, and let the cookies cool a bit--and dig in!!
