almond biscotti with chocolate drizzle
growing up, i remember sneakily taking an almond biscotti or two for a midday snack. these were huge biscottis, the kirkland biscottis, which were almost twice the length of my hand. but oh, ho ho, were they delicious!
i never thought i was a fan of crunchy foods, like the way biscottis are, but the way it crumbles and how the flavors rush in is simply delightful.
not sure why i never attempted to make these before, because they are so easy! one of the easiest recipes i've attempted.
so--i am ever more so psyched to share this with you all!
ingredients:
1/2 cup softened butter
1 cup brown sugar
2 large eggs
1 tsp vanilla extract
2.5 cups flour
2 tsp baking powder
two handfuls (apologies, i didn't really measure, i added to my eye's pleasure) or more of sliced almonds
instructions:
- preheat oven to 350F
- add butter and brown sugar to a bowl, beat and mix well.
- add vanilla and eggs, until combined.
- fold in sliced almonds.
- shape into 2 8" x 2" logs, and place on a baking sheet.
- bake for 25 minutes. Remove and cool for approximately 30 minutes.
- lower the oven to 300F.
- slice logs into about 1/2 inch slices and place on a cookie sheet.
- place back into oven for about 15 minutes.
- cool on a wire rack.
- for the chocolate drizzle: melt chocolate pieces (i used some leftover chocolate chips) with some milk. place both in the microwave, stirring every 10-15 seconds. the ratio of milk and chocolate will vary, depending on how concentrated or viscous you want it. trial and error until you find your ideal consistency!
- drizzle + serve!
did i mention they also taste absolutely fabulous with a cup of hot coffee? and pretty much any hot drink? this makes it the perfect recipe to make while it's still winter.
