buttery lemon cookies
i brought these to work and (not to flaunt, but) everyone loved them. i loved them. my boss loved them. you will love them!
they taste just like a lemon shortbread. i tweaked the original recipe and added more lemon juice and zest because lemon flavored desserts are some of the best out there! this recipe was relatively easy to make, as in easy enough to make on a weeknight (which was what i did). these look like cookies of sunshine, and when dusted with powdered sugar, as if to mimic snow, they make a perfect holiday cookie.
give it a try and let me know how many you end up eating by the time you finish baking the entire batch (i’m the last to judge)!
ingredients
1 cup butter (aka 2 sticks)
2/3 cup granulated sugar
1 egg
3 tbsp lemon zest
3 tbsp lemon juice
2.5 cups flour
powdered sugar (for dusting)
instructions
- preheat oven to 350F
- cream butter and sugar until fluffy and creamy
- beat in egg
- add lemon zest and lemon juice
- mix in flour by increments until fully combined
- roll dough into small golf balls and press down with a fork to flatten slightly and make a criss cross shape (see picture below):
bake for 13-15 minutes until the edges turn slightly golden brown
- transfer to cooling rack, and dust with powdered sugar when cooled
they are so good! moist, crumbly upon bite with a slight chew.
the ingredients needed are found in every home, so get used to having lemons around because these will be a go-to recipe, even after the holidays :)
