jam hand pies
hand pies -- just in time for pie day!
if i had to choose between cake and pie, i'd choose pie; it's a solid 30/70 for me.
and these bite sized pies are just perfect, because when else can you say you've had 3 pies? :) i decided to make these last minute to bring to work tomorrow after a coworker brought up the idea, so these ingredients (there's just 3!!) can be snatched really quickly and easily if you don't have them already.
to be honest, this is my first time making them, and they're so easy and so customizable that i can't help but jump on and share this with you. here it is --
yields: 14 hand pies
ingredients:
2 frozen pie crust rounds
14 tsp any kind of fruit jam/preserves (i used raspberry)
egg wash (1 egg + 1 tbsp milk)
instructions:
- follow directions to thaw pie crust, then unroll onto floured work surface to slightly thin out crust.
- cut out shapes from the dough using a cookie cutter of any shape (i used a circle, approximately 2.5 inches in diameter) and place them on parchment paper/silpat.
- place a tsp of jelly in the middle of each crust round.
- place a second round on top, press down on the edges with a fork.
(i had layered the top round lightly without pinching the two pieces together) - place them in the freezer as you preheat the oven to 425F to help them hold their shape.
- prepare the egg wash, and right before you put them in the oven, brush the top with the wash.
- bake for 11-12 minutes, cool, and enjoy!
