brookie (brownie + choc chip cookie)
this is what addiction looks like.
my first time trying this recipe, and i'm obsessed! i ate a fifth of the batch once i finished, and i regret none of it. the best part of this recipe is that it's super easy, and you also get a lot from it (approximately 4 dozen!!); so fear not, you will be stocked for a while.
it looks more intricate than it really is. all you do is you take a little ball from each batter, marry them, bake them, and eat them. a thousand thanks to mel for the original recipe.
ingredients
brownie cookie batter:
10 tbsp butter (softened)
2/3 cup lightly packed brown sugar
2/3 cup granulated sugar
1 large egg
1 large egg yolk
1 tsp vanilla extract
1 1/4 cups + 3 tbsp flour
1/2 cup unsweetened cocoa powder
1 tsp baking soda
1/4 tsp salt
choco chip cookie batter:
10 tbsp butter (softened)
2/3 cup granulated sugar
2/3 cup light brown sugar
1 tsp vanilla
1 large egg
1 large egg yolk
2 cups + 2 tbsp flour
1 tsp baking soda
1/3 tsp salt
1 1/2 cups chocolate chips
instructions:
- preheat oven to 350F.
- brownie batter: in an stand mixer or with a hand mixer, mix butter, granulated, and brown sugar together until smooth.
- add egg and egg yolk, and vanilla, and mix.
- in a separate bowl, whisk flour, cocoa powder, baking soda, and salt.
- combine with wet ingredients until all mixed -- do not over mix! (mix by hand to prevent it)
- chocolate chip batter: mix butter and both sugars until smooth.
- add in egg, egg yolk, and vanilla.
- in a separate bowl, whisk flour, baking soda, and salt.
- combine both + chocolate chips until well combined.
- take a small piece from each dough (~1 tbsp or so), place them side by side, mold the two pieces and round the edges.
- place them 2 inches apart (they will spread) and bake for 8-9 minutes (i like mine underbaked).
- let them cool slightly before transferring them to a cooling rack.
eat an extra cookie (or two) for me!!
