espresso brownies


this is hands down my most favorite brownie recipe. the top is flaky and crispy with the center chewy and fudgy. not to mention it also contains espresso, it’s basically better than your average energy bar! i saw this originally on pinterest and i couldn't help but become inspired to make my own!

ingredients:

12 tbsp butter
9 oz bittersweet/semi sweet chocolate, chopped
1 cup sugar
3 eggs
2 tsp vanilla
2 tbsp espresso/strong coffee
1 tbsp instant espresso/coffee powder
1 tsp salt (i used kosher)
1 cup flour
1 tbsp cocoa powder

instructions

  1. preheat oven to 350F.
  2. melt butter and chocolate in a double boiler, stir frequently until all melted.
  3. remove butter+chocolate mixture from heat and mix in the sugar.
  4. add the eggs, one at a time, making sure each egg is fully combined before adding the next.
  5. combine vanilla, espresso, espresso powder, salt.
  6. combine flour and cocoa powder and mix until thoroughly incorporated.
  7. pour mixture in a lined (or greased) 8x8 pan.
  8. bake for 30-35 minutes and check for finish using the toothpick method. focus on the middle of the pan for the most accurate reading! 
  9. cool and cut!
