espresso brownies
ingredients:
12 tbsp butter
9 oz bittersweet/semi sweet chocolate, chopped
1 cup sugar
3 eggs
2 tsp vanilla
2 tbsp espresso/strong coffee
1 tbsp instant espresso/coffee powder
1 tsp salt (i used kosher)
1 cup flour
1 tbsp cocoa powder
instructions
- preheat oven to 350F.
- melt butter and chocolate in a double boiler, stir frequently until all melted.
- remove butter+chocolate mixture from heat and mix in the sugar.
- add the eggs, one at a time, making sure each egg is fully combined before adding the next.
- combine vanilla, espresso, espresso powder, salt.
- combine flour and cocoa powder and mix until thoroughly incorporated.
- pour mixture in a lined (or greased) 8x8 pan.
- bake for 30-35 minutes and check for finish using the toothpick method. focus on the middle of the pan for the most accurate reading!
- cool and cut!
