anzac biscuits (with honey)
i've been trying recipes that require 1) less/no eggs, and/or 2) less/no flour since people are baking more than normal and resources are low (nuuuu), and i came across this one. anzac biscuits! they're traditionally made with golden syrup, though it's very hard to find, so i substituted it with honey instead, and they still turned out beautifully.
i'm normally not a thin cookie gal (chunky, chewy cookies 5ever) and i can be picky with coconut flavored desserts, but i was very happily surprised with these. they have a oatmeal cookie-like texture, and the coconut flakes give it a nice nutty taste. mmmm.
these unfortunately aren't the traditional way to make them, but because we gotta make do with what we can at this time, make these if this recipe saves you a trip to the store to get an extra ingredient or two!
ingredients:
1/2 cup unsalted butter
2 tbsp honey (or use golden syrup if you have!)
2 tbsp hot water
1 tsp baking soda
2/3 cup granulated sugar
1/4 tsp salt
1 cup flour
1 cup rolled oats
3/4 cup shredded coconut (unsweetened)
instructions:
- preheat oven to 350F.
- microwave butter and honey/golden syrup until bubbling.
i recommend doing this in 30-45 increments, and decreasing the time as it gets hotter to avoid burning anything - whisk in hot water and baking soda.
the baking soda will make the mixture bubble -- but keep mixing! - mix in sugar and salt first; then followed by flour, oats, and coconut.
- mix until a dough is formed, and roll into balls.
- place the balls, slightly flatted with your fingers, 2-3 inches apart since these cookies spread.
- bake for 9-10 minutes. you can check when they're about to be done when the edges are browned and the center is still light.
if you're worried about what time to take them out of the oven, i would lean on the side of taking them out earlier, as the cookies still continue to bake for a bit once you bring them out of the oven. they also tend to get a bit browner out of the oven as well. - cool + devour.
i enjoyed these so much more than i thought i would!
and they're soo easy and quick to make since they don't need any chill time. so if you want to bake these on a weekday after work, go for it!!
