yogurt muffins


i didn't plan on blogging this at all -- i literally took these pictures in front of the fridge and had made them spontaneously earlier this morning. but i realized i want to share this go-to recipe that i always use when i need to get rid of *almost* expired yogurt in the fridge. and it's so easy to make! so so easy. no chill time as well in this one, so once you start at it you will end up with scrumptious muffins by the time you finish. and in no time. yaaaz.
this recipe is best with flavored yogurt, and fresh fruit if you have any on hand. i unfortunately didn't have any at this time. i used chobani strawberry yogurt for my muffins today. look at the size of this tub!


i love yogurt, but i don't do well with it when i'm on a time crunch and need to finish it in 2 days. 

this recipe works well with any flavored yogurt -- strawberry, mango, peach, blueberry. it's even good without adding fresh fruit. 

ingredients:

1 3/4 cups flour
3/4 cup granulated sugar
1 tsp baking powder
3/4 tsp baking soda
1/2 tsp cinnamon (you can omit if you don't have at the moment)
1/4 tsp salt (omit if you are using salted butter)
1 cup yogurt (strawberry, blueberry, etc, whatever you have on hand and need to use up)
1 egg
1 tbsp milk (of your choice - dairy, nut, etc)
6 tbsp melted butter, cooled
** optional: 3/4-1 cup chopped fresh fruit

instructions:
  1. preheat oven to 400F.
  2. melt the butter in a heat safe bowl. leave it on the side to cool.
  3. in a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
  4. in a separate bowl, mix yogurt, egg, milk, and cooled melted butter until well combined.
  5. add in wet ingredients to dry ingredients. stop after they have been just combined -- do not over mix.
  6. pour into muffin/cupcake liners, or muffin pan sprayed with non-stick, approximately 2/3 full.
  7. bake for 14-15 minutes. 
  8. let it cool before eating -- the muffins develop a slight crunchy outer layer with a moist, fluffy inside when cooled first before eating.
  

so fluffy! they actually look like dinner rolls, now that i look at these pictures again!
but they are muffins, i promise you. i already ate three so i can vouch for it...heh heh.
