biscoff bars

i always look forward to getting the free biscoff cookies during plane rides, because they are 10x better than pretzels. am i right or am i right..? 🤷

i’ve made these multiple times within a few days because 1. they’re actually easy to make and 2. they taste good without being too overly sweet! i have a sweet tooth, but when you want a little something without feeling too guilty afterwards, these are the ones.
i’ve tried out different ways to make them, based off sweetness levels. ill put the adjustments to the recipe at the bottom of the ingredients list.

ingredients

3/4 cup flour
1/4 cup ground biscoff cookies (i used a blender)
.5 cup sugar (white, light brown, coconut — your choice. i used light brown.)
.5 tsp baking powder
.5 cup milk (whole, oat, almond, soy — your choice. i used both almond and whole in separate recipes and they both turned out great.)
1/4 cup oil
1 egg

optional:
you can also add in the batter -
.5 cup chocolate chips
.5 cup shredded coconut
you can also sprinkle on top -
additional ground cookie bits
top with whole biscoff cookies (an 8x8 pan fits 8 cookies perfectly, see the pics!)

instructions

  1. preheat oven to 350F and line or grease an 8x8 pan.
  2. combine flour, ground biscoff cookies, sugar, and baking powder. set aside.
  3. in a smaller bowl, combine wet ingredients: oil, egg, and milk.
  4. combine wet and dry ingredients.
  5. mix in optional ingredients.
  6. pour into prepped pan, and top with optional toppings (or whatever you’d like, really!)
  7. bake for 20-23 minutes, just as long as an inserted toothpick comes out clean. 
  8. wait until cool before slicing into bars! 
eight cookies placed in two columns fit perfectly! you can also halve each of the cookies to double the amount of bars too.
this batch, i omitted chocolate chips and sprinkled some ground biscoff on top.

i added chocolate chips in this batch, and to be honest, i can’t decide which one i like better!
