2 ingredient nut butter cookies


i have a decent sized sweet tooth, and sometimes, a piece or two of dark chocolate just doesn't cut it. these are perfect because 1) you only need two ingredients (!!!), 2) they're small batch, and 3) they bake relatively fast! the cooling time is a bit longer to make sure they don't fall apart, but they're about ready after you've finished cleaning up the kitchen. i topped mine with (more) chocolate, because why not 😁 
i had some andes on hand, but any chocolate will do.

ingredients (makes ~7-8 cookies)

1/2 cup nut butter of choice (peanut, sunflower, almond. i used almond)
2 tbsp honey (maple syrup also works if you prefer that)
chocolate for topping

instructions:
  1. mix nut butter and honey together in a bowl. 
    it will get sticky, but the more you mix, the more cohesive it will be and easier to handle.
  2. spoon a ball size of ~1.5 inch diameter on baking sheet.
  3. bake for 10 minutes, remove from heat, and immediately top with chocolate.
  4. let them cool for at least 15 minutes on the sheet before transferring to a cooling rack.
  5. enjoy! 
they crumble and melt in your mouth 🤤
