10 minute stovetop granola

 

this one is so fun and quick to make! you can easily customize this to your preference: you can make this recipe gluten free if you have gluten free oats on hand, add/take away seeds/nuts of your choice, and adding dried fruit (raisins and dried cranberries also work well). i can easily make this in multiple batches and snack on this for breakfast, midday snack, and dessert, with fruit, milk, yogurt, and cacao nibs. 

just made some this morning, and i prefer to eat this with a splash of milk to get the most of the maple syrup and cinnamon-y flavors. i find cereal milk to be wayyy to sweet, but this granola milk is fiya 🔥

ingredients:

1 cup oats
1/4 cup pepita seeds
1/4 cup sunflower seeds
1/3 cup coconut flakes
1/4 cup chopped walnuts
1 tsp cinnamon
3 tbsp maple syrup

instructions:

  1. toast oats on a non-stick skillet on medium heat until warm to the touch and slightly fragrant.
  2. add toppings (seeds, coconut, walnuts) and cinnamon, toast for ~3 minutes, still on medium.
  3. on low heat, add maple syrup and mix continuously until the mixture becomes dry (low heat is important so that the syrup doesn't burn).
  4. remove from heat, and let it cool before storing it in an airtight container. 
  5. add toppings/liquids and enjoy!


this combination + a splash of milk is my favorite!
