baked apple fritter loaf
in the midst of all that, i wanted to pop back on and share this one here that gave me joy this past week, and hoping it'll do the same for you!
while living in portland for graduate school, i fell in love with apple fritters. but not just any apple fritter -- blue star's hard apple cider fritter. so. good!!!
so let's just say this is a healthier version that mimics the crunchy, crispy fried top of an apple fritter. i love all things pumpkin, but apple desserts tend to hit the heart a bit differently, especially during this fall season. and don't even get me started about how it'll make your entire house smell...(it basically doubles as a fall candle).
ingredients:
for the loaf -
1/3 and 2/3 cups of brown sugar, separated
1 tsp cinnamon
.5 cups (1 stick) butter, softened
2 eggs
2 tsp vanilla extract
1.5 cups all purpose flour
.5 cups milk of choice
1.5-2 cups diced apples
for the glaze -
.5 cups powdered sugar
.5 tbsp butter, melted
2 tbsp milk
instructions:
- preheat oven to 350F.
- spray loaf pan or line with parchment paper
- mix 1/3 cup brown sugar and cinnamon and set aside.
- in a large mixing bowl, cream sugar and butter until smooth, then add in eggs, vanilla, and milk.
- in a separate bowl, combine flour and baking powder.
- combine the two mixtures until well combined.
- pour half of the batter into the loaf pan, add 1 cup of diced apples, topped with the second half of the batter and the rest of the apples on top.
- sprinkle and spread the cinnamon sugar mixture on top of the loaf, as evenly as possible.
- bake for 50-60 minutes, checking with a toothpick.
- make the glaze by mixing all of the ingredients together, and pouring over the loaf only after the loaf has cooled.
- slice, and enjoy! the apples in the center of the loaf evens out the ratio of batter to apples, so you're in for a treat!
