microwave peach cobbler

 

peaches are so underrated. yellow peaches, white peaches, name them all. they're delicious. although i enjoy myself a crunchier peach, there's something very succulent about a juicy soft one. 

this one is so fun to make because 1. you only need a microwave cuz sometimes all you can wait is five minutes for a dessert, 2. i get to eat it myself, and 3. it's all for myself. i can also imagine this being made with any stone fruit, honestly. which makes it even better. oh, i guess berries too. just dump in all the fruit! 

ingredients
fresh peach
1/4 cup oats
1 tsp coconut oil
2 tsp sweetener of choice (i used honey, you can also use maple syrup)
greek yog
cinnamon

instructions

  1. combine oats, coconut oil, and sweetener
  2. pour crumble mixture on top of diced peaches 
  3. microwave for 1.5-2 minutes
  4. add a dollop of greek yog, and a sprinkle of cinnamon.
ya'll. just looking at these pictures make me want to make another one later today. i devoured mine in seconds, and i cannot even begin to imagine this turned into a dessert form with added ice cream on top instead of yogurt. yummm.
