cocoa rice krispies with mini marshmallows and *birthday* oreos

 

happy 2026! as of march (aka just earlier this week), i realized i'm in a very 'rice krispy' time in my life. feeling inspired to experiment with some rice krispy recipes. they're quick/easy, no bake, customizable, and also just delicious?! oh, and nostalgic. what a great combination. 

i added some birthday oreos for a friend's birthday, and i'm really excited to try this recipe with other oreos too! this recipe also includes vegan marshmallows and gluten free cocoa krispies, but of course, use whatever you prefer ✌

ingredients 

  • 8x8 pan
  • 4 cups of rice krispies (i used gluten free cocoa for this recipe)
  • 1 stick of salted butter
  • 10 oz of mini marshmallows (8 oz to be mixed with butter, 2 oz to be mixed in afterwards)
  • 1/3 cup maple syrup
  • 1 tbsp vanilla extract
  • 1.5 cups crushed oreos of choice
instructions
  1. melt butter in a medium pot on low (low and slow)
  2. add in 8 oz of mini marshmallows and maple syrup, mixing slowly until all melted and combined
  3. remove from heat and add rice krispies, fold in gently
  4. after a few minutes, add crushed oreos (i just lightly chopped them on a cutting board since i wanted visibly pieces of oreos) and 2 oz of mini marshmallows, and fold in
  5. pour into 8x8 pan and gently spread
  6. cool before slicing 💘
